The popular kebab or shashlik is (in most of Spain) made with skewered meat eaters, usually chicken or pork marinated in paprika and garlic, usually spicy depending on the type of paprika used in the marinade. The original kebab is made with lamb, beef or chicken (never pork), usually flavored with a mixture of many spices (ras el hanout) including in its basic composition: cumin, oregano, coriander, turmeric, caraway, paprika, nutmeg, cayenne and cinnamon, among others. All this mixture of ingredients is crushed and added in different proportions, depending on the officiant and the customer.
